Hand harvest takes place at the end of September. After a soft pressing, the fermentation takes place at a controlled temperature for about 15 days. Second fermentation by Charmat method in stainless steel with selected yeasts for about three months.
Pale straw yellow with soft greenish hues. The perlage is fine and persistent. Elegant aroma with hints of sage, thyme and mint. Smooth, fresh and agreeable, with strong aromatic notes.
Ideal as an aperitif and with light appetizers, lovely with prawns. It matches perfectly with savoury fish dishes, mixed fried fish and vegetables.
