After handpicked harvesting, grapes are naturally dried on wooden slatted frames for 35 days under controlled humidity and temperature conditions. After drying, the grapes are cooled at a low temperature for a few days, then crushed and fermented in the skins. The fermentation is slow and lasts more than a month at a temperature of 15°C. A further ageing on yeasts for more than a year follows.
Beautiful intense golden yellow. Warm scent, intense and floral with underlying tones of nuts, withered rose, raisins and candied fruit peel. Sweet and velvety simply exploding upon taste for its nectar flavour and aromatic complexity.
Wonderful with full-flavored, salty cheeses; delicious with semi-sweet desserts, chocolate, fresh fruit.
